Happy Valentine’s Day!
Today I thought I’d share a recipe I found at the beginning of 2020. It’s a French recipe, and we all know French is the language of love supposedly so what better way to show your love by baking yourself or someone else a good cake!
Like I said I found this recipe during the first UK lockdown – gosh that seems so long ago! It posed so many new challenges for each of us. For myself, I was tasked with shielding myself from the general public in order to keep myself safe as someone who was deemed “Extremely Clinically Vulnerable” by the UK Government due to my medical condition. To make matters worse, Mr. Wooliefeatures caught COVID at the beginning of the pandemic, meaning he had to isolate in the bedroom alone for a couple of weeks, which presented some interesting problems – how would I shop for groceries? How would I pick up my medicine prescriptions?
Luckily, my work colleagues were happy to do contactless deliveries to my home, going to the supermarket for me and then dropping them off at my door. But it meant I had zero control over what they could buy me! The UK went into panic buying mode during the first lockdown, leaving supermarkets shelves empty of certain things, which was insane, so these grocery drop offs would turn into a problem solving exercise – what can I make with these ingredients? I was often stumped, especially when I received ingredients that I didn’t particularly like!
One of these ingredients were pears. I’m not a big fan of pears. I’m not a big fan of most fruit to be honest with you so after a bit of googling, I found this recipe for a French Pear Cake from French Mum Cooking Blog and I must say, this cake was delightful. It is moist and light, not too sweet, with a delicately, light pear flavour. It’s subtle and to me it’s perfect!
French Pear Cake
Recipe for 1 cake
- Preparation: 15 minutes
- Cooking: 60 minutes
- Total: 1h15
- 3 eggs
- 2.82 oz (80g) sugar + 3.53 oz (100g) for preparing the syrup
- 5.64 oz (160g) wheat flour
- 2 teaspoons baking powder
- 5.29 oz (150g) salted butter softened to roon temperature (or add 1/2 teaspoon salt to 5.29 oz i.e. 150g unsalted butter)
- 2 ripe pears (large size, preferably Williams)
- 3.53 oz (10 cl) water
- 1 teaspoon vanilla extract or 1 sachet of vanilla sugar
This recipe is not particularly sweet but you can add more sugar if you wish (6oz). As you know I’m on a low sugar diet for medical reasons so this recipe was perfect for me.
- Preheat oven to 350°T (180°C)
- Peel the pears, remove the core and cut them into two pieces
- Prepare syrup: bring to a boil 3.53 oz (10 cl) water with 3.53 oz (100g) sugar into a saucepan.
- Reduce to low heat and add the pears. Cover the saucepan and cook during 15 minutes
- Dice the pears
- Whisk eggs with 2.82 oz (80g) sugar into a bowl. Add the flour, baking powder, vanilla and butter softened at room temperature (if it’s cold you can melt it in micro-wave). Mix well.
- Gently add the pears and mix carefully
- Butter and flour a rectangular cake mould
- Pour the dough into the mould and bake for about 45 minutes
- Let cool till serving
There are a couple of modifications that you could do such as adding chocolate chips or a tablespoon of cognac before you add the pears to the cake batter. You could also add some cinnamon or spices to the syrup to tailor it to a season like winter! Oh that would be delicious!
This cake is perfect for an afternoon tea session or as a “goûter” snack after school for the kids. It is a great, easy dessert to make for a knitting circle!
